In a creamy garlic sauce, this pasta dish has tender chicken, crispy bacon, fresh spinach, and cherry tomatoes.
Ingredients:
- 8 oz pasta
- 2 chicken breasts, diced
- 4 slices bacon, chopped
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions:
Cook pasta according to package instructions, drain, and set aside
In a large skillet, cook bacon until crispy
Remove bacon and set aside, leaving the bacon fat in the skillet
Add diced chicken to the skillet and cook until browned and cooked through
Add minced garlic to the skillet and cook for 1-2 minutes until fragrant
Stir in heavy cream, grated Parmesan cheese, spinach, and cherry tomatoes
Cook until spinach wilts and sauce thickens, about 5 minutes
Add cooked pasta and crispy bacon to the skillet, toss until everything is well coated in the sauce
Season with salt and pepper to taste
Serve hot, garnished with additional Parmesan cheese if desired
