This Vegan Pad Thai is a delicious and flavorful noodle dish that even meat eaters will love. It's packed with colorful vegetables, protein-rich tofu, and a tangy-sweet sauce. It's easy to make and perfect for a quick weeknight dinner.
Ingredients:
- 200g rice noodles
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup tofu, diced
- 2 tbsp peanut oil
- cup peanuts, chopped
- 2 green onions, chopped
- 1 tbsp sesame seeds
Instructions:
Follow the directions on the package to cook the rice noodles
Remove the water and set it aside
To make the sauce, mix the soy sauce, maple syrup, and lime juice in a small bowl with a whisk
Put away
Put peanut oil in a large pan and heat it over medium-low heat
Put in the tofu, carrot, bell pepper, garlic, and broccoli
Stir-fry the vegetables for 5 to 7 minutes, or until they are soft
Put the sauce and cooked noodles in the pan
Toss everything together until it's all well mixed and hot
Sprinkle chopped peanuts, green onions, and sesame seeds on top of the hot dish
