These vegan almond butter banana cookies are the perfect combination of chewy and sweet. They're easy to make and packed with wholesome ingredients.
Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 1/4 teaspoon cinnamon
- 1/4 cup chopped almonds optional
Instructions:
Preheat oven to 350F 175C
In a mixing bowl, combine mashed bananas, almond butter, maple syrup, and vanilla extract
Add rolled oats and cinnamon to the mixture, stirring until well combined
Fold in chopped almonds if desired
Drop spoonfuls of the dough onto a lined baking sheet, flattening each slightly with a fork
Bake for 12-15 minutes or until edges are golden brown
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
