Almond Pesto Zucchini Noodles are a tasty and light take on regular pasta. The homemade almond pesto gives the dish more depth and richness of flavor, while the zucchini noodles add a fresh and healthy base.
Ingredients:
- 3 medium zucchinis, spiralized
- 1 cup fresh basil leaves
- 1/3 cup almonds, toasted
- 2 cloves garlic
- 1/4 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
In a food processor, combine basil, toasted almonds, garlic, and Parmesan cheese
Pulse until finely chopped
With the food processor running, slowly drizzle in olive oil until a smooth pesto forms
Season with salt and pepper to taste
In a large skillet, heat olive oil over medium heat
Add spiralized zucchini noodles and saut for 2-3 minutes until just tender
Remove skillet from heat and toss zucchini noodles with almond pesto until well coated
Serve immediately, optionally garnished with additional grated Parmesan cheese and chopped almonds
