Avocado Salmon Salad



This Avocado Salmon Salad is a delicious and healthy choice for a light meal. It's packed with fresh ingredients and topped with a flavorful dressing.

Ingredients:

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens
  • 2 avocados, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

Preheat the oven to 375F 190C

Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper

Bake salmon for 15-20 minutes or until it flakes easily with a fork

Let it cool slightly

In a large salad bowl, combine mixed greens, sliced avocados, red onion, cherry tomatoes, sliced almonds, and crumbled feta cheese

In a separate small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper to make the dressing

Flake the cooled salmon into bite-sized pieces and add it to the salad

Drizzle the dressing over the salad and toss gently to combine

Serve immediately and enjoy!
