Cauliflower and Broccoli Cheese Salad



A delightful and cheesy twist on a classic cauliflower and broccoli dish, this salad is perfect for a light lunch or as a side dish for dinner. The roasted florets are coated in a creamy and tangy cheese dressing, making it a crowd-pleaser.

Ingredients:

  • 1 small head of cauliflower, cut into florets
  • 1 small head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Mixed salad greens for serving

Instructions:

Turn on your oven and heat it up to 200C 392F

The broccoli and cauliflower florets should be mixed with olive oil, salt, and pepper in a large bowl

Place the florets that have been coated on a baking sheet

Roast them in an oven that has already been heated for 20 to 25 minutes, or until they are soft and slightly browned

Let them cool down

Grate the cheddar and Parmesan cheeses and mix them with the Greek yogurt, Dijon mustard, minced garlic, fresh parsley, honey, and lemon juice in a different bowl

Mix everything together well

After the broccoli and cauliflower have cooled, add them to the cheese mixture and gently toss to coat the florets all over

Put the cauliflower and broccoli cheese salad on top of a bed of mixed salad greens
