Crock Pot Bourbon BBQ Chicken Sandwiches with Apple Slaw



Tender, flavorful bourbon-infused BBQ chicken served on sandwich buns with a crunchy and refreshing apple slaw. Perfect for a hearty and satisfying meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup bourbon whiskey
  • 1 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the apple slaw:
  • 2 apples, thinly sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 8 sandwich buns, for serving

Instructions:

In a crock pot, place chicken breasts

In a mixing bowl, combine bourbon, barbecue sauce, brown sugar, Worcestershire sauce, garlic powder, salt, and pepper

Pour over the chicken

Cover and cook on low for 6-8 hours, or until chicken is tender and cooked through

Shred the chicken using two forks and mix with the sauce in the crock pot

For the apple slaw, in a separate bowl, combine sliced apples, mayonnaise, apple cider vinegar, honey, salt, and pepper

Toss until well coated

To assemble sandwiches, place a generous amount of bourbon BBQ chicken on the bottom half of each bun, top with apple slaw, and cover with the top half of the bun

Serve immediately and enjoy!
